Making pasta toasted with some cheese and garlic with some basil can change your taste buds but this recipes is a mixture of thickly and creamy texture of smashed potato sautéed in olive oil, garlic, basil with Greek yogurt. It will change your mood and give a new taste to your mouth.
Necessary Ingredients and Equipments for the recipe:
Fast you have to take 2 and ¼ pound russet potatoes, 2 and ¼ cup of non- fat Greek yogurt, 6 basil leaves, 2 medium size garlic cloves, 3 tbsp grated Romano cheese, 3tbsp of extra virgin olive oil and pepper and salt according to your taste. It will take around 45mins to cook the Greek yogurt mashed potato in Italian style. You have to take a potato masher, a cutting board, small non-stick fry pan, garlic press, wooden spoon and a large pot with lid.
Direction for the recipe of Italian- Style Greek Yogurt smashed potatoes:
First wash the potatoes and keep them for boiling for 10-15 min, a after boiling the potatoes drained the extra water and add the yogurt into it and smashed it with the masher or ricer to give it a desired texture, then press or chop the peeled garlic cloves and then chop the basil leaves finely. Then take the fry pan add 1 tbsp olive oil and then add the garlic and sauté them in a low or medium frame. Make sure that the fame is medium otherwise the garlic can burn. As the garlic become yellow in the oil then add the chopped basil after adding the basil cook for 1-2 min and then remove it from the heat. After removing it from heat then add the grated cheese and 2 tbsp of olive oil.
Now add the sautéed basil and garlic to the smashed potatoes and blend it very well. Add pepper and salt according to your taste. If you are not very health concise then you can add 1-2 tbsp of butter for taste and texture. And now you add the Greek yogurt and mix it thoroughly. You can add a basil leave on the top for tasty garnishing and can add a little olive oil on the top of your potatoes. It will be perfect for 4-6 persons. It is easy to make and it is very healthy at the same time. It contains yogurt which is very helpful in summer to keep your body or your stomach cool. As we all know that in summer eating yogurt is very help full because it saves us for heat.
